B-Color Sweet Corn

We had a wonderful surprise Saturday. Our neighbors Carl and Carrie drove up to Charlie’s U-Pik in Wiggins and stopped by on their way home to gift us three large cantaloupes and a fifty-pound sack of bi-color sweet corn. We cooked three ears Saturday evening and three more tonight — it is so good.

Today Patty and I made a full day of it: shucking, blanching, chilling in ice water — ice courtesy of our other neighbors Mike and Anita and their big ice machine — then cutting it off the cob, flash freezing, and vacuum sealing in two-plus pound bags for the freezer. Nine ears tucked away for the week, and a good supply put up for later.
